Cacio e Pepe was the first dish I had when I arrived in Rome. It’s a great example of simple cooking. While this dish might seem way too simple, the way the ingredients are used create an amazing blend that without a doubt is perfect for any day of the year, and a great dish for a simple date night.

Description

Delicious, simple, 4 ingredient italian pasta dish. Can be done within 15 minutes.


Ingredients

  • Spaghetti or Fettucine Pasta
  • Grana Padano
  • Pepper

Instructions

  1. Prep: In a pot, start boiling water. Grate Grana Padano.
  2. In a large pan on low-medium heat, place freshly ground/cracked pepper in the pan. There should be a large amount, and after a few minutes you should really smell the pepper toasting, filling your kitchen with a strong aromatic pepper smell.
  3. Place pasta in boiling water. When it is nearly cooked, take pasta and pasta water and put it in the pan with the ground pepper. Once pasta and pasta water are in the pan, immediately throw in the grated grana padano cheese. Make sure the heat is not too strong or you will overcook your pasta and burn the cheese. Mix the pasta with tongs until water is evaporated and cheese is well distributed.
  4. Platting: On a plate, bowl or deep plate, place your pasta and garnish with more cheese and freshly ground pepper.
  5. That’s it!

Notes

  • You can easily make this dish gluten free by making gluten free pasta, or buying it at the supermarket
  • You don’t need to add other ingredients
  • Use grana padano and not crap american cheese, you can also use Parmigiano Reggiano
  • You do not need to add salt in the dish, there is already salt in the pasta water and cheese.
