Is there anything more refreshing than a fresh summer salad? Not sure. These are some of the simplest and most delicious recipes you will make. Even if you’re not into salads. I have nothing against my vegan and vegetarian friends but I enjoy living (eating meat). Although my diet consists of 75% meat eggs and milk, there is still a place for amazing fruit and veggies. Most people will complain that vegetables are boring but most of them neglect the key ingredient to making veggies good. ACID. Citrus and vinegars, and adding pickled food to your salads is key to flavour.
This recipe is the simplest of them all, and can be customized to making it your preference. The simplest form of this recipe would be only 2 ingredients: basil and tomato, and as usual make sure to use the best tomatoes (and do not use beefsteak tomatoes for salad). This simple combination of 2 ingredients combines the earthy and bitter taste of basil with the sweet acidity of tomatoes, in a perfect and simple harmony. The more ingredients you add, the more it will stray away from its roots, but make sure the tomato and basil remain the key ingredients. Olive oil and/or balsamic vinegar can be added for more rich flavour. The final ingredient I love to add is pickled shallots, not onions, shallots. This recipe is obviously inspired by a caprese, but this recipe is seen as a twist and I do not feel it’s respectable to call it a caprese, you can find my recipe for caprese here. Make sure the mozzarella is real Italian mozzarella, and not the fake American mozzarella. Preferably di bufala mozzarella (which It should come in a plastic container or bag with water in it. Unless you are making a big salad, you can use ½ , 1/3 or ¼ of the ball. Adjust the recipe to your liking.

Ingredients
- Tomato
- Basil
- Pickled Shallots
- Olive Oil
- Balsamic Vinegar
- Salt & Pepper
Instructions
1. Cut tomatoes in dice or rounds and combine with basil leaves
2. Cut mozzarella in cubes or half circles
3. Add a small amount of pickled shallots
4. Mix Salad and drizzle olive oil and balsamic vinegar on top
5. Add ground pepper and salt to taste
Notes
- Feel free to not include mozzarela, pickled shallots, balsamic vinegar
- Quantities of each ingredient are up to your taste, but the basil and tomatoes should be the dominant flavours
